Ingredients

For the cake pops, you will need: 1 box red velvet cake mix, 2 eggs, ¾ cup vegetable oil, ¾ cup water, 1 (8-ounce) cream cheese, 1 cup buttercream frosting, 1 (12-ounce) package white chocolate chips, 1 teaspoon vegetable oil, and lollipop sticks.

Instructions

To make the cake pops, start by preheating your oven to 350°F. In a medium bowl, mix together the cake mix, eggs, vegetable oil, and water until everything is combined. Grease a 9x13-inch baking dish with non-stick cooking spray and then spread the batter evenly in the pan. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool completely.

Once the cake is cooled, use your hands to break it into small pieces in a large bowl. In a separate bowl, mix together the cream cheese and buttercream frosting until completely combined. Add the cream cheese mixture to the cake pieces and mix until everything is combined. Using a cookie scoop, scoop the cake mixture into 1-inch balls and place them on a parchment-lined baking sheet. Place the baking sheet in the freezer for 15-20 minutes, or until the cake pops are firm.

When the cake pops are chilled, melt the white chocolate chips in a microwave-safe bowl. Heat the chocolate in 30 second intervals, stirring in between each interval, until the chocolate is melted and smooth. Add the teaspoon of vegetable oil to the melted chocolate and stir to combine. Dip the lollipop sticks in the chocolate and then insert them into the cake pops. Dip the cake pops into the melted chocolate and place them back on the parchment-lined baking sheet.

Allow the cake pops to set until the chocolate is firm. Serve and enjoy!

Tips and Tricks

To make sure the cake pops stay together, be sure to mix the cake mixture with the cream cheese mixture until everything is completely combined. If the cake mixture is too dry, you can add a few tablespoons of buttercream frosting to help the mixture come together.

If you want to avoid the hassle of dipping the cake pops in white chocolate, you can also use candy melts or chocolate bark instead. Just be sure to follow the instructions on the package for melting and dipping instructions.

If you want to add some decorations to your cake pops, you can add sprinkles, edible glitter, or other decorations before the chocolate sets. You can also drizzle some melted chocolate over the top of the cake pops for a fun and colorful effect.

For a fun twist, you can also add some chopped nuts, dried fruit, or even cookie crumbles to the cake mixture before forming the cake pops.

These cake pops can be stored in an airtight container at room temperature for up to 5 days. You can also freeze them for up to 3 months.
