Ingredients

For the cake, you'll need:

  • 3 cups of all-purpose flour

  • 1/2 cup of softened unsalted butter
  • 8 ounces of cream cheese, softened
  • 4 cups of confectioners sugar
  • 2 tablespoons of milk
  • 1 teaspoon of pure vanilla extract

Instructions

To make the cake, preheat the oven to 350°F and grease three 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the vanilla extract. Add the eggs one at a time, beating after each addition. Alternately add the flour mixture and buttermilk to the wet mixture, beating until just combined. Divide the batter evenly among six bowls. Add a few drops of food coloring to each bowl, stirring until combined.

Pour the batter into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 5-10 minutes before transferring to a wire rack to cool completely.

To make the frosting, beat the butter and cream cheese together until smooth. Beat in the confectioners sugar, one cup at a time, until light and fluffy. Beat in the milk and vanilla extract until combined. Place one layer of the cooled cake onto a cake plate and top with a generous layer of cream cheese frosting. Repeat with the remaining layers of the cake.

Frost the top and sides of the cake with a thin layer of the frosting. Place the remaining frosting in a large ziploc bag and snip off the corner. Pipe rainbow stripes on the top of the cake. Place a few sprinkles on top of the cake, if desired. Slice and serve.
