- 3/4 cup butter, softened
- 6 cups confectioner’s sugar
- 2 teaspoons vanilla extract
- 1/2 cup milk
Instructions
Cake
Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch cake pans.
In a medium bowl, sift together the cake flour, baking powder and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Divide the batter among 6 bowls, adding a few drops of food coloring to each bowl to create your desired colors. Pour each color into a prepared pan.
Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into the center of the cake comes out clean. Cool in pans for 10 minutes, then turn out onto a wire rack and cool completely.
Frosting
In a medium bowl, cream together the butter and confectioner's sugar until light and fluffy. Beat in the vanilla and milk until the frosting is smooth and creamy. Add more milk or confectioner's sugar if needed to achieve the desired consistency.
To assemble the cake, place one layer on a plate or cake stand. Spread with frosting, then top with the next layer. Continue with the remaining layers, frosting the top and sides of the cake. Decorate the cake with sprinkles, if desired.
