Ingredients

This nice butter cake recipe is not only easy to make but also delicious. You will need the following ingredients to make it:

  • 2 and 1/4 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of salt
  • 3/4 cup of butter (1 and 1/2 sticks), softened
  • 1 and 3/4 cups of granulated sugar
  • 3 large eggs, room temperature
  • 1 cup of buttermilk, room temperature
  • 2 teaspoons of pure vanilla extract
  • 1/2 cup of chopped walnuts or pecans (optional)
  • 1/2 cup of semi-sweet chocolate chips (optional)

Instructions

Start by preheating your oven to 350°F (175°C). Grease and line a 9-inch (23cm) round springform pan with parchment paper. Set aside.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl using a hand mixer or stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on medium speed until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating after each addition until combined. Scrape down the sides and bottom of the bowl as needed.

With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk and vanilla, beginning and ending with the dry ingredients. Beat each addition just until combined. Do not overmix. Fold in the nuts and/or chocolate chips.

Pour the batter into the prepared pan and spread into an even layer. Bake for about 35-40 minutes or until a toothpick inserted in the center comes out clean. If the top starts to brown too quickly, cover loosely with aluminum foil after about 25 minutes.

Remove from the oven and let cool completely in the pan set on a wire rack. Once the cake has cooled, run a butter knife around the edges of the pan to loosen the cake. Remove the sides of the pan and invert the cake onto a plate or cake stand. Serve with a dusting of powdered sugar and/or a dollop of freshly whipped cream.
