Ingredients

  • 225g (8oz) soft butter
  • 225g (8oz) caster sugar
  • 4 large eggs

  • 2 tablespoons milk
  • 225g (8oz) mixed dried fruit
  • 100g (4oz) glacé cherries, quartered
  • 225g (8oz) marzipan

Instructions

Step 1: Preheat the Oven



Preheat the oven to 150°C (130°C fan, gas mark 2). Grease a 20cm (8in) round cake tin and line the base with greaseproof paper.

Step 2: Prepare the Cake Batter



In a large bowl, cream together the butter and sugar until light and fluffy. Gradually beat in the eggs, one at a time, adding a tablespoon of the flour with each egg to prevent the mixture from curdling. Sift in the remaining flour and the ground almonds and baking powder, and stir together with a metal spoon until evenly combined.

Stir in the lemon rind, milk and dried fruit, and then pour the mixture into the prepared tin. Smooth the top with a palette knife and level off. Bake in the oven for 1½–2 hours, or until a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10 minutes.

Step 3: Decorate the Cake



Turn out the cooled cake onto a plate and discard the greaseproof paper. Arrange the quartered glacé cherries on top of the cake and then roll out the marzipan on a lightly floured surface until it is about 5mm (¼in) thick. Drape the marzipan over the cake and trim off any excess. Bake in the oven for a further 10–15 minutes or until the marzipan is golden-brown.
