Ingredients

This recipe for peppermint brownie cake pops is the perfect way to indulge in a sweet treat without going overboard. The ingredients you need to make this delicious dessert are:

  • 1 box of your favorite brownie mix, plus the ingredients required to make the brownies
  • 1 cup of semi-sweet chocolate chips
  • 1/2 cup of heavy cream
  • 1/2 teaspoon of peppermint extract
  • 1/2 cup of crushed peppermint candies
  • White candy melts

Instructions

To prepare this fantastic dessert, begin by preheating your oven to 350 degrees Fahrenheit and lightly grease a 9x13 inch baking dish. Prepare your brownie mix according to the package instructions and pour it into the prepared baking dish. Bake the brownies for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once the brownies are done baking, let them cool completely.

Meanwhile, in a medium-sized bowl, combine the chocolate chips and heavy cream. Microwave the mixture for 30-second intervals, stirring in between, until the chocolate chips are melted and the mixture is smooth. Add in the peppermint extract and stir until combined. Pour the mixture over the cooled brownies and spread it out evenly.

Sprinkle the crushed peppermint candies over the top of the brownies. Put the baking dish in the refrigerator and let it chill for at least 2 hours, or until the chocolate mixture has hardened. Once the mixture has hardened, remove it from the refrigerator.

Using a melon baller or spoon, scoop out small balls of the peppermint brownie mixture and place them on a parchment-lined baking sheet. Place the baking sheet in the freezer for 1 hour. Once the balls have frozen, melt the candy melts according to the package instructions.

Remove the baking sheet from the freezer and, using a fork, dip each ball in the melted candy melts. Place the cake pops back on the baking sheet and let them chill in the refrigerator for 1 hour, or until the candy melts have hardened. Serve the cake pops chilled and enjoy!
