Paula Deen Chocolate Mousse Cake Recipe
Ingredients
For the cake, you will need the following ingredients: two cups of all-purpose flour, one teaspoon of baking powder, one teaspoon of baking soda, one teaspoon of salt, one cup of unsalted butter, two cups of granulated sugar, one cup of unsweetened cocoa powder, four large eggs, one cup of sour cream, one teaspoon of vanilla extract, and one cup of hot coffee.
For the chocolate mousse, you will need the following ingredients: one and a half cups of semi-sweet chocolate chips, one and a half cup of heavy cream, one tablespoon of cornstarch, one teaspoon of vanilla extract, and four large egg whites.
Instructions
To make the cake, preheat the oven to 350 degrees Fahrenheit and grease two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In the bowl of an electric mixer, beat together the butter and sugar until light and fluffy. Add the cocoa powder and beat until combined. Add the eggs one at a time, beating well after each addition. Add the sour cream and vanilla extract and beat until combined.
Add the dry ingredients to the wet ingredients and beat until combined. Slowly add the hot coffee and beat until combined. Divide the batter between the two cake pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before removing them and transferring them to a wire rack to cool completely.
To make the chocolate mousse, melt the chocolate chips in a double boiler. In the bowl of an electric mixer, beat the cream and cornstarch until stiff peaks form. Add the vanilla extract and beat until combined. In a separate bowl, beat the egg whites until stiff peaks form. Fold the egg whites into the cream mixture and then fold in the melted chocolate. Allow the mousse to chill in the refrigerator for at least one hour.
Once the cakes and mousse have cooled, sandwich the two layers of cake together with the mousse. Place the cake in the refrigerator for at least two hours or overnight for the mousse to set. Serve chilled.
