Ingredients

  • 200g butter
  • 1 cup brown sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 ¼ cups plain flour

  • 1 cup sultanas
  • 1 cup currants

Instructions

Preheat the oven to 160°C and grease a 20cm round cake tin. Cream the butter and sugar together in a large bowl until light and fluffy. Beat in the eggs one at a time, followed by the vanilla.

Sift the flour, baking powder and spices into the bowl and mix until combined. Stir in the sultanas, currants and mixed peel.

Pour the batter into the prepared cake tin and bake for 1 hour and 30 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and brush with the brandy. Leave the cake to cool in the tin.

When the cake is cool, turn it out onto a serving plate and dust with icing sugar. Serve with a dollop of cream or a scoop of ice cream.
