  • 175g butter, softened

Instructions

Preheat your oven to 180°C, 160°C fan or gas mark 4. Grease and line two 20cm (7.9 inch) round cake tins with baking parchment.

Using an electric mixer, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating after each addition until combined. Add the orange zest.

Sift the flour and baking powder into the mixture and fold in. Add the orange juice and mix until combined.

Divide the cake mixture between the two tins and spread out evenly. Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the centre comes out clean.

Once the cakes are cooked, allow them to cool in the tins for 10 minutes before carefully turning out onto a cooling rack. Allow the cakes to cool completely before assembling the cake.

Step 6

To assemble the cake, spread the orange marmalade over the top of one of the cakes. Place the second cake on top and dust with icing sugar.
