Instructions

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour two 8-inch round cake pans. Set aside.

In a large bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

In a separate bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Alternately add the dry ingredients and milk to the butter and sugar mixture, beginning and ending with the dry ingredients. Beat until just combined.

Fold in the cranberries, walnuts, almonds, and raisins. Divide the batter evenly between the prepared cake pans.

Bake the cakes for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in their pans for 10 minutes, then turn out onto a wire rack to cool completely.

Once the cakes have cooled, sprinkle the top of one of the cakes with icing sugar. Place the other cake on top and sprinkle the remaining icing sugar onto the top of the cake.
