Ingredients



For the cake:
  • 225g/8 oz softened butter
  • 225g/8 oz caster sugar
  • 4 large eggs
  • 225g/8 oz self-raising flour
  • 1 tsp baking powder

  • 2-3 tablespoons red food colouring
  • 2-3 tablespoons milk


For the topping:
  • 100g/4 oz softened butter
  • 200g/7 oz icing sugar
  • 225g/8 oz full-fat cream cheese (such as Philadelphia)

Instructions

Making the Cake

1. Preheat the oven to 180C/160C Fan/Gas 4. Grease and line two 20cm/8in sandwich tins.

2. Place the butter and sugar in a bowl and beat until light and fluffy. Add the eggs one at a time, beating well after each addition.

3. Add the flour, baking powder, cocoa powder and food colouring and mix until just combined. Add a little milk if it is too dry.

4. Divide the mixture evenly between the cake tins and spread evenly. Bake in the preheated oven for 25-30 minutes or until an inserted skewer comes out clean.

5. Leave to cool in the tins for 10 minutes and then turn out onto a wire rack to cool completely.

Making the Topping

1. Place the butter and icing sugar in a bowl and beat until light and fluffy. Add the cream cheese and beat until smooth.

2. Place one of the cake layers on a plate and spread with the cream cheese mixture. Place the other cake layer on top.

3. Spread the remaining cream cheese mixture on top of the cake. Decorate with edible decorations of your choice.
