Ingredients

  • 1/2 cup butter (at room temperature)
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup red food coloring
  • 1/2 cup white chocolate chips
  • 1/2 cup pink candy melts

Instructions

Making the Cake Pops:

Preheat your oven to 350 degrees Fahrenheit. Grease a 9-inch round baking pan with butter. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Finally, stir in the buttermilk and red food coloring until everything is well mixed. Pour the batter into your prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Allow the cake to cool completely before proceeding.

Once the cake is cool, break it into large chunks and place it into a large bowl. Use your hands to mash the cake until it’s all crumbly. Melt the white chocolate chips in the microwave in 30-second intervals, stirring in between, until fully melted. Pour the melted chocolate over the cake and mix until everything is evenly coated. Using a small cookie scoop or a teaspoon, scoop out some of the cake mixture and form into balls. Place the cake balls on a baking sheet lined with parchment paper and freeze for 15-20 minutes.

When the cake balls are frozen, melt the pink candy melts in the microwave in 30-second intervals, stirring in between, until fully melted. Dip the end of a lollipop stick into the melted candy melts and then insert it into the cake balls. Dip the cake balls into the melted candy melts, one at a time, and use a spoon to help cover them in the candy melts. Place the cake balls back onto the baking sheet and let them set. Decorate with sprinkles and enjoy!
