Instructions:
To make this passion fruit mousse cake, begin by preheating the oven to 350 degrees Fahrenheit and greasing a 9-inch cake pan. In a medium bowl, whisk together the eggs and sugar until the mixture is light and fluffy. Add the baking powder and flour, and mix until just combined. Pour the batter into the prepared cake pan, and bake for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Meanwhile, make the butter cream by creaming together the butter and cream cheese until light and fluffy. Add in the condensed milk, vanilla extract and powdered sugar, and beat until completely combined. Set aside.
To make the mousse, add the passion fruit puree, sugar, and cold water to a small saucepan. Heat over low heat until the sugar is dissolved. In a small bowl, add the gelatin and 2 tablespoons of cold water, and let it sit for 5 minutes until it has fully bloomed. Add the bloomed gelatin to the saucepan, and stir until fully dissolved. Remove from heat, and let cool for 10 minutes. In a medium bowl, whip the heavy cream until stiff peaks form. Add the cooled passion fruit mixture to the whipped cream, and fold until completely combined.
To assemble the cake, remove the cooled sponge cake from the pan, and cut into three even layers. Place the first layer of the cake on a serving platter, and spread with half of the butter cream. Top with the second layer of the cake, and spread with the remaining butter cream. Top with the third layer of cake, and spread with the passion fruit mousse. Refrigerate for at least 2 hours before serving.
To make the passion fruit glaze, combine the passion fruit juice, cornstarch, sugar, and cold water in a small saucepan. Heat over medium heat, stirring constantly, until the mixture has thickened. Add the butter, and stir until melted. Remove from heat, and let cool for 10 minutes before spooning over the cake. Refrigerate for at least 1 hour before serving.
