Ingredients

For the cake, you will need the following ingredients: 250g of softened butter, 250g of golden caster sugar, 4 medium free-range eggs, 250g of self-raising flour, 2 tablespoons of cocoa powder, 1 teaspoon of baking powder, 2 tablespoons of red wine, ½ teaspoon of ground cinnamon, and 2 tablespoons of demerara sugar.

For the glaze, you will need: 2 tablespoons of red wine, 2 tablespoons of golden syrup, and 2 tablespoons of demerara sugar.

Instructions

To make the cake, preheat your oven to 180°C (Gas Mark 4). Grease and line a deep 20cm cake tin with baking parchment. Place the butter and golden caster sugar in a large bowl and cream together until light and fluffy. Beat in the eggs one at a time, adding a spoonful of the flour with each egg to prevent curdling. Add the remaining flour, cocoa powder and baking powder, then mix together.

Stir in the red wine and ground cinnamon, then pour the mixture into the prepared tin and level the top. Sprinkle with the demerara sugar and bake in the preheated oven for 45 minutes, or until an inserted skewer comes out clean. Allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.

To make the glaze, combine the red wine, golden syrup and demerara sugar in a small saucepan and warm over a low heat until the sugar has dissolved. Increase the heat and simmer for 5 minutes, stirring occasionally. Brush the glaze over the top of the cooled cake and leave to set.
