Every 4th of July, you have a great opportunity to show your creativity in the kitchen. Celebrate America’s independence with this delicious red, white and blue cheesecake cake. This impressive dessert has layers of moist vanilla cake, creamy cheesecake, and sweet raspberry jam, topped with a colorful star-shaped decoration. It will be the star of the show at your summer picnics or cookouts!

Ingredients

  • 1 box white cake mix
  • 1 8-ounce package cream cheese, softened
  • 1/2 cup butter, softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup raspberry jam
  • 1/2 cup fresh blueberries
  • 1/4 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup butter
  • 1/2 cup sliced almonds
  • Red and blue food coloring

Instructions

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.

In a large bowl, mix together the cake mix, cream cheese, 1/2 cup butter, 1/4 cup sugar, 1 teaspoon vanilla extract, and 2 eggs. Beat until creamy. Divide the batter into two bowls. Add a few drops of red food coloring to one bowl, and a few drops of blue food coloring to the other. Pour each color of batter into the prepared cake pans.

Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow the cakes to cool for 10 minutes in the pans, then turn out onto cooling racks to cool completely.

In a small bowl, mix together the raspberry jam and blueberries. Spread the raspberry mixture over one of the cooled cake layers. Place the other layer on top.

In a medium bowl, mix together 1/4 cup flour, 1/4 cup sugar, 1/4 cup butter, and 1/2 cup sliced almonds. Sprinkle over the top of the cake, pressing lightly to make sure it adheres.

Bake at 350 degrees F (175 degrees C) for 25 minutes. Allow to cool before serving.
