Ingredients

  • 180g/6oz golden syrup

Instructions

Preheat the oven to 180C/160C Fan/Gas 4. Grease and line a 20cm/8in square cake tin with baking parchment.

In a large saucepan, melt the golden syrup, treacle, butter and brown sugar together until the butter has melted and it is all combined.

Bring the mixture to the boil, then remove from the heat and stir in the black tea.

In a separate bowl, mix together the eggs, ginger, cinnamon, bicarbonate of soda and self-raising flour. Gradually add this to the wet ingredients, stirring continuously until it is all combined.

Pour the mixture into the prepared tin. Bake in the oven for 45-50 minutes, or until a skewer inserted into the centre of the cake comes out clean.

Leave the cake to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.

Serve the Parkin Cake with a dollop of clotted cream or custard.
