For the Frosting:

- 1 cup heavy cream
- 2 tablespoons butter, softened

Instructions
Making The Cake
Preheat your oven to 350 degrees. Grease and flour three 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In the bowl of an electric mixer, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, mix together the cocoa powder and buttermilk. Slowly add the wet ingredients to the butter and sugar mixture, stirring until just combined.
Divide the batter equally between the three prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
Making The Filling
In a medium bowl, combine the coconut cream, sugar, and vanilla extract. Beat with an electric mixer until light and fluffy.
Making The Frosting
In a medium saucepan, heat the chocolate chips and heavy cream over low heat, stirring constantly, until the chocolate is melted and smooth. Remove from the heat and stir in the butter and vanilla extract. Allow the mixture to cool to room temperature.
Assembling The Cake
When the cake layers and frosting have cooled, place one cake layer on a serving plate. Spread the coconut cream filling over the cake layer. Top with the second cake layer and repeat. Place the third cake layer on top and spread the frosting over the entire cake. Sprinkle the top of the cake with the toasted coconut flakes.
