- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3/4 cup of softened butter
- 1 cup of sugar
- 3 eggs
- 1 teaspoon of vanilla extract
- 1/2 cup of milk
- 1/4 cup of sour cream
- 2 tablespoons of fresh lemon juice
- 1/4 cup of chopped pecans
- 1/2 cup of chopped walnuts
- 1/4 cup of chopped almonds
- 2 tablespoons of confectioners' sugar
- 1/4 cup of raspberry jam
- 1/2 cup of strawberry jam
- 1/4 cup of apricot jam
- 1/2 cup of raspberry liqueur
- 1/2 cup of white chocolate chips
- 1/2 cup of dark chocolate chips
- 2 tablespoons of butter
- 1/2 cup of heavy cream
- 1/2 cup of powdered sugar
Instructions
To make the princess cake, start by preheating your oven to 350 degrees F. Grease and flour a 9-inch round cake pan. In a medium bowl, combine the flour, baking soda, and baking powder. Set aside.
Using an electric mixer, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Alternately add the flour mixture and the milk, beginning and ending with the flour. Stir in the sour cream and lemon juice. Fold in the pecans, walnuts, and almonds. Pour the batter into the prepared pan and bake for 30 minutes.
While the cake is baking, prepare the raspberry, strawberry, and apricot jams. Put each jam in a separate bowl and stir in 1 tablespoon of the liqueur. Set aside.
In a double boiler, melt the white and dark chocolate chips with the butter. Stir until smooth. Remove from heat and let cool slightly.
Once the cake has finished baking, remove it from the oven and let cool completely. Once cooled, remove the cake from the pan and place it on a serving plate. Spread the raspberry, strawberry, and apricot jams over the cake. Drizzle the melted chocolate over the top of the cake.
In a medium bowl, whip the heavy cream with the confectioners' sugar until stiff peaks form. Spread the whipped cream over the cake and sprinkle with the remaining liqueur. Refrigerate the cake for at least 1 hour before serving.
