Ingredients

  • 200g Odlums Self Raising Flour
  • 100g caster sugar
  • 100g butter

  • 50g chopped almonds
  • Zest of half an orange

Instructions

Preheat the oven to 180°C/350°F/Gas Mark 4 and grease and line a 20cm/8in round cake tin with baking parchment.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then add the milk and vanilla extract and mix until combined.

Add the Odlums self-raising flour to the bowl and mix until just combined. Stir in the dried fruits, almonds and orange zest until evenly distributed. Spoon the cake mixture into the prepared cake tin and level the top.

Bake in the preheated oven for 40-45 minutes, or until a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
